I absolutely love a smoothie bowl! I enjoy making them often, using a variety of veggies, fruits and superfoods. I love to make indulgent bowls that can easily be a meal or a healthy dessert alternative. If you’ve downloaded my Scrumptious Salads & Smoothies cookbook, you’ve seen many of my favorites that are all different but equally delish! Check out that free cookbook here! Today, I am sharing my Matcha Strawberry Mint smoothie bowl. It is sweet, minty, indulgent and incredibly nutritious. Full recipe below.
Health + Beauty Benefits of the Matcha Strawberry Mint Smoothie Bowl: This smoothie bowl contains bananas, pineapple, kiwi, strawberries, chia seeds and of course, matcha. All the fruits in this bowl are incredibly high in antioxidants and fiber. They are amazing for gut health and provide a major boost of vitamin C (which assists collagen production and even helps protect the skin from the UV rays!). Pineapple, in addition to vitamin C, contains an enzyme called bromelain which is known to be great for combating inflammation in the body & skin. Bananas provide the body with quick energy and contains metabolism boosting vitamin B6. Chia seeds give a great boost of fiber and healthy omega 3s. All of these ingredients are amazing for a healthy body and glowing skin! Now let’s talk about the star of this bowl -Matcha! Matcha is similar to green tea as it’s derived from the same plant. However matcha is grown differently – the plant is shaded from direct sunlight, which increases the chlorophyll & amino acids found within. Additionally, matcha contains more antioxidants than green tea. The benefits of matcha are vast and this smoothie bowl is a great way to enjoy it.
To be perfectly honest, I have not always been a matcha fan. I’ve tried matcha teas and lattes and I was not a fan of the earthy taste (I always say it tastes like pond water haha). Even so, I’ve really wanted to consume it for the incredible health benefits, and that’s how this beautiful smoothie bowl was created! Using mint and pineapple provides a lovely sweetness that completely disguises the matcha flavor. (note: if you like the way matcha tastes, feel free to omit the pineapple in this recipe altogether) This bowl is delicious, filling and very hydrating (thanks to the juicy fruits!). I’m confident you’ll love it just as much as I do!
Recipe
Ingredients:
2 frozen bananas
1/2 cup frozen pineapple
one bunch of fresh mint
1/3 cup + 1 tbsp macadamia milk (or your favorite plant milk)
1/2 tsp matcha powder

1. In a high-speed blender, combine the bananas, pineapple, mint, matcha & macadamia milk. Blend well until desired consistency is achieved (a perfect smoothie bowl has the consistency of ice cream or soft serve. yum!) Please note: you will have to scrape the ingredients off the sides of the blender a few times & additional milk may be required as you go, to aid blending
2. Pour into bowl and top with strawberries, kiwi & chia seeds.
3. Enjoy!
Other topping that would taste great: granola, shredded coconut and cacao nibs.
