Ingredients (serves two):
– The Tofu Nourish Bowl –
I block extra firm organic tofu
1 cup cooked quinoa
1 cup chopped red cabbage
1 cup thinly sliced carrots
1/2 cup chopped tomatoes
1 tbsp balsamic vinegar
Cajun seasoning
smoked paprika
salt & pepper
– The Hot Honey Dressing –
1 tbsp honey
1 tbsp dijon mustard
1/4 tbsp apple cider vinegar
freshly squeezed juice of 1/2 lime
red pepper flakes
Instructions:
1. Prepare tofu by pressing to remove excess water. (if you don’t have a tofu press, simply wrap the tofu block with clean cloth or paper towels and gently press a few times)
2. Preheat oven to 400 degrees Fahrenheit
3. Slice tofu into cubes and marinate in the balsamic vinegar, a hearty dash of Cajun seasoning, smoked paprika, salt & pepper (measure these spices with your heart! The more Cajun seasoning, the more heat)
4. Meanwhile, while tofu is marinating and oven is preheating, cook the quinoa according to package directions.
5. Place marinated tofu on a parchment paper lined baking sheet. Bake for 30 minutes, flipping over halfway through cooking time.
6. Prepare the Hot Honey Dressing by whisking together all ingredients: honey, dijon mustard, apple cider vinegar, lime juice, and a good sprinkle of red pepper flakes (the more, the spicier). Adjust measurements of ingredients to fit your preferred taste & thin with water if desired.
7. Add the quinoa, tofu, shredded cabbage, sliced carrots and tomatoes to a bowl. Drizzle the Hot Honey Dressing over top. Garnish with lime & enjoy!
