Healthy and delicious pesto pasta! This meal is dairy free, full of leafy greens and so easy to make. Simply toss a few ingredients into a blender (or food processor) and pour over your noodles of choice! Full recipe below.
Ingredients you’ll need: cashews, fresh spinach leaves, fresh basil, garlic, lemon, vine-ripened tomatoes, pine nuts, nutritional yeast & your favorite noodles.

Recipe
serves two
Ingredients:
1 cup cashews, soaked (soak in water for 20 minutes to soften, making them easier to blend)
1 cup fresh basil leaves / 1 large bunch
2 cups fresh spinach leaves
2 cloves of garlic
1/2 lemon, juiced
1/2 tbsp nutritional yeast
vine-ripened cherry tomatoes (as many as you’d like!)
1 1/2 tbsp pine nuts, chopped
2/3 water
salt & pepper to taste
Instructions:
1. Cook noodles per package instructions.
2. Blend the cashews, basil, spinach, garlic, lemon juice, nutritional yeast, 1/2 tsp salt and water until smooth. Additional water may be needed to aid in blending, or if you prefer a smoother sauce.
3. Pour pesto over noodles and plate. Add chopped pine nuts and cherry tomatoes. Add salt & pepper to taste.
4. Garnish with basil. (optional)
