A delicious salad with spicy chickpeas, crisp veggies and an easy-to-make healthy ranch dressing!

Ingredients needed:
(serves two)
1 head organic romaine lettuce
1 large organic cucumber
Cherry tomatoes on the vine (however many you like)
1 can organic chickpeas, drained & rinsed
1/3 cup unsweetened dairy-free yogurt (I like the Forager brand Unsweetened Plain Yogurt. It’s made with just a few clean organic ingredients & without artificial sugar or flavors)
Your favorite Hot / Buffalo sauce (I like the Frank’s Red Hot Original Sauce because it’s oil-free)
Cajun seasoning, to taste
1 tsp lemon juice, freshly squeezed (juice of about 1/2 small lemon)
1/2 tsp apple cider vinegar
1/4 tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp dried dill
Instructions:
1. Wash romaine lettuce, cucumber and cherry tomatoes
2. Chop romaine, cut cucumber and cherry tomatoes. Place in bowl.
3. Heat chickpeas in a nonstick skillet over medium heat. Add the hot sauce and cajun seasoning, to taste. The more you add, the spicier! Warm for about 5 minutes.
4. Prepare the ranch: simply mix together the dairy-free yogurt, lemon juice, apple cider vinegar, salt, onion powder, garlic powder & dried dill. Feel free to thin with a tiny bit of water, if desired.
5. Add chickpeas to salad.
6. Drizzle ranch dressing over salad.
7. Enjoy!
